Breakfast Burrito Casserole

My husband and I are having family visiting next month and I’ve been trying out recipes that will feed several people. This is a great recipe to have on those occassions. It’s filling, comforting, and oh so good. It’s also perfect to make for a lazy weekend and it only uses 6 ingredients. Easy peasy lemon squeezy.

Ingredients:

1 lb. sausage

1 can Rotel tomatoes, drained

2 1/2 cups shredded cheese, divided

6 eggs

2 cups half and half

10 flour tortillas

Directions:

Assemble the casserole the night before and bake it in the morning.

Spray a 9×13-inch pan with cooking spray and set aside. Mix together sausage, Rotel tomatoes, and 2 cups of cheddar cheese. Divide meat and cheese minture between tortillas. Roll up each tortilla and place seam side down in the baking dish.

Whisk together half and half and eggs. Pour over tortillas. Cover and let sit overnight. (note: I made this only a few hours before baking and it was still great)

When ready to bake, preheat oven to 350 degrees. Bake covered for 30-40 minutes. Remove foil and sprinkle remaining 1/2 cup of cheese over burritos. Bake for 5-10 minutes, until cheese is melted. Top with salsa.
